I love ceviche sooo much, that I made a Theresa*ism style Ceviche tutorial for you all! =) I hope you like it! BTW> I am making a little more with these ingredients, its meant for a BBQ party.
Ingredients:
Pepper
Ginger (only if you are using fresh clams)
1 Lemon
2 Limes
Cilantro
1/2 a Yellow Onion (optional, I didn't use it, my brother hates onions)
3 Tomatoes
7 Jumbo Shrimps
4lbs of Clams ( I used fresh clams, you can used canned if you like)
1/2 lb of Mahi Mahi Fish
okay lets start cooking! >> I feel like the Cooking Mama from the game. hahaha
First boil 2 SEPARATE pots of water (one big, one small)
in the big one add your sliced ginger and clams.
okay, I took a picture of it after it was cooked haha.
grab your shrimps, peel and de-vein them.
Now add them to the small pot, and let them boil.
until they look like this...
take them out and chop them into chunks.
Now grab your tomatoes, make sure they are dry.
Cut them in half to squeeze out the seeds.
Now, lets go fruit slicing samurai ninja on them...
okay take the clams out of the pot, and let it cool down in a colander.
Wash your cilantro and lets cut them up too!
put them in the bowl with the tomatoes, and start shucking the clams out of the homes.
Add Cilantro, Tomatoes, shrimp, and clams into bowl...
Take out your lemon and limes...and squeeze those suckers dry.
ok, now lets dice up that Mahi Mahi, its getting lonely.
add your Mahi Mahi into the lemon/lime juice (remember this cooks the fish, the cintrus from the lemon and lime cooks the fish so you don't need to use heat)
let it sit in the lemon/lime juice for about 5 minutes before dumping the whole dish into the mix.
its in! add a little pepper, and mix it together! Refrigerate to incorporate the flavors. BTW you can add Jalapenos to yours if you like...I am adding spicy habanero salsa on top when I eat it. YUM!
You can eat it with tortilla chips, plain corn tortilla, ...in my case I used tortillas (its a healthier choice)
time to CHOW DOWN!!
